{"id":6076,"date":"2016-02-24T16:59:33","date_gmt":"2016-02-24T15:59:33","guid":{"rendered":"http:\/\/www.lyceedechamalieres.fr\/?p=6076"},"modified":"2016-02-28T17:04:58","modified_gmt":"2016-02-28T16:04:58","slug":"visite-de-la-taverne-de-maitre-kanter","status":"publish","type":"post","link":"https:\/\/lyceedechamalieres.fr\/?p=6076","title":{"rendered":"Visite de la Taverne de Maitre Kanter"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-thumbnail wp-image-6077\" src=\"http:\/\/www.lyceedechamalieres.fr\/wp-content\/uploads\/2016\/02\/img-6-150x150.jpg\" alt=\"img\" width=\"150\" height=\"150\" srcset=\"https:\/\/lyceedechamalieres.fr\/wp-content\/uploads\/2016\/02\/img-6-150x150.jpg 150w, https:\/\/lyceedechamalieres.fr\/wp-content\/uploads\/2016\/02\/img-6-144x144.jpg 144w\" sizes=\"auto, (max-width: 150px) 100vw, 150px\" \/>Les \u00e9tudiants de la classe de <a href=\"http:\/\/www.lyceedechamalieres.fr\/?page_id=101\">Mise \u00e0 Niveau H\u00f4tellerie<\/a> se sont rendus chez Maitre Kanter mardi 9 f\u00e9vrier avec leur professeur de Restaurant Jean-Pierre D\u00e9quesnes.<br \/>\nSur place, Laurent Jaboin, directeur, ancien \u00e9l\u00e8ve de notre lyc\u00e9e h\u00f4telier, leur a fait d\u00e9couvrir son \u00e9tablissement,<!--more--> ses salles de restaurant, sa carte, son bar et leur a dress\u00e9 l\u2019historique de cette maison faisant partie d\u2019un des principaux groupes de la restauration fran\u00e7aise, le groupe Flo.<br \/>\nJonathan Charles, directeur adjoint, a poursuivi la visite de l\u2019\u00e9tablissement et a d\u00e9crit son propre parcours.<br \/>\nL\u2019apr\u00e8s-midi s\u2019est termin\u00e9 par une d\u00e9monstration de l\u2019\u00e9cailler du restaurant, Jean-Louis Plane.<br \/>\nL&rsquo;\u00e9cailler, dans un restaurant dot\u00e9 d\u2019une \u00e9tale ext\u00e9rieure pr\u00e9sentant fruits de mer et crustac\u00e9s, est en charge de la pr\u00e9paration des produits de la mer command\u00e9s par les clients. Il ouvre les hu\u00eetres, pr\u00e9pare les diff\u00e9rents mollusques et coquillages, dresse les plateaux de fruits de mer et autres pr\u00e9parations de langoustines, tourteaux, crevettes\u2026.<br \/>\nAinsi, les \u00e9tudiants ont observ\u00e9 comment ouvrir les huitres, ont gout\u00e9 aux huitres, boulots, langoustines, crevettes, crevettes grises, couteaux, praires, coques et crabes.
