Dans ce palace, pas toujours facile de s\u2019imposer en tant que femme aupr\u00e8s des clients. Pourtant, l\u2019exp\u00e9rience est bien l\u00e0 : au Saint- Martin&amp;Spa (2 \u00e9toiles) en Provence, \u00e0 l\u2019H\u00f4tel Royal Evian ainsi que chez Michael Wignall au Latymer (2 \u00e9toiles aussi) \u00e0 Bagshot, en Angleterre. Fort de sa connaissance des vins et des terroirs, il fait partager \u00e0 ses h\u00f4tes sa passion en sublimant la cuisine du chef \u00e0 travers des accords des plus classiques au plus inattendus.
