Dans ce cadre et comme le veut la tradition, un grand plateau de tous les fromages, cr\u00e8mes et beurres AOP de France a \u00e9t\u00e9 dress\u00e9. <!--more--><\/p>\n<p>Pour assurer cette pr\u00e9sentation, <a href=\"http:\/\/www.aop-saintnectaire.com\/\" target=\"_blank\" rel=\"noopener\">l&rsquo;interprofession du fromage Saint-Nectaire<\/a> qui a accueilli l&rsquo;\u00e9v\u00e9nement, a sollicit\u00e9 le lyc\u00e9e des m\u00e9tiers de l&rsquo;h\u00f4tellerie, de la restauration et du tourisme de Chamali\u00e8res.<\/p>\n<p>24 \u00e9tudiants en BTS H\u00f4tellerie premi\u00e8re ann\u00e9e ont donc fait le d\u00e9placement jusqu&rsquo;\u00e0 Super-Besse pour travailler sur la d\u00e9coupe, l&rsquo;assemblage et le montage de cet unique plateau de fromages.<\/p>\n<p>Pour Christian de Gaspari, professeur de restaurant au lyc\u00e9e h\u00f4telier,<em> \u00ab\u00a0Nous avons tout de suite accept\u00e9 de relever le d\u00e9fi car c&rsquo;est une chance unique pour les \u00e9l\u00e8ves de s&rsquo;exercer avec l&rsquo;ensemble des fromages fran\u00e7ais d&rsquo;appellation. Un projet \u00e0 la fois p\u00e9dagogique et pratique. Durant quinze jours, nous nous sommes entra\u00een\u00e9s pour assurer au mieux ce challenge. Apr\u00e8s de multiples r\u00e9flexions, nous avons opt\u00e9 pour la r\u00e9alisation de quatre buffets sur lesquels ont tr\u00f4n\u00e9 une douzaine d&rsquo;appellations. Notre volont\u00e9 \u00e9tait de mixer les go\u00fbts et les terroirs. C&rsquo;est pourquoi, nous avons privil\u00e9gi\u00e9 un m\u00e9lange entre les diff\u00e9rents types de fromages\u00a0\u00bb<\/em>.<\/p>\n<p>L&rsquo;AOP Saint-Nectaire s&rsquo;est ainsi retrouv\u00e9e aux c\u00f4t\u00e9s de l&rsquo;Ossau-Iraty, du Selles-sur-Cher, du Munster, du Chaource et du Reblochon.
